These are some recipes I’ve found that my family LOVES and I thought I’d share with you. Enjoy!






DINNERS….

Chicken Cacciatore and Pasta

1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves
1 3/4 cups chicken stock
1 teaspoon dried oregano leaves, crushed
1 teaspoon garlic powder
1 (14.5 ounce) can diced tomatoes
1 small green pepper, cut into 2 inch strips
1 medium onion, cut into wedges
1/4 teaspoon black pepper
2 1/2 cups uncooked medium shell shaped pasta

Heat oil in a 10 inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until its well browned on both sides.

Stir in stock, oregano, garlic powder, tomatoes, green pepper into the skillet and heat to a boil. Stir in the pasta and Reduce heat to Low.

Cover and cook for 15 minutes or until pasta is tender.

Chicken Bake

1 (6 ounce) package chicken-flavor stuffing mix
1 1/2 cups hot water
1/4 cup butter, cut into pieces
4 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of mushroom soup
1/3 cup milk

In a large bowl combine the seasoning packet from the stuffing mix with the hot water and butter. Let stand until butter melts. Stir in the stuffing crumbs, just to moisten, and let stand for 5 minutes.

Preheat oven to 375 degrees F (190 degrees C).

Place the chicken down the center of a 8×12 inch baking dish. Mix together the soup and milk and pour mixture over the chicken. Spoon some of the stuffing over the chicken breasts, then spoon the rest along the sides of the chicken. Bake in the preheated oven for 35 minutes or until the chicken is fully cooked and the juices run clear.

Cola Pork Chops

1 cup ketchup
1 cup cola-flavored carbonated beverage
2 tablespoons brown sugar
8 pork chops
salt and pepper to taste

Preheat oven to 350 degrees F (175 degrees C).

Mix together the ketchup, cola and brown sugar.

Place pork chops into a baking pan and pour cola mixture over, coating well. Sprinkle with salt and pepper.

Bake for about one hour depending on the thickness of the pork chop.

PIZZA PASTA

8 ounces rotini pasta
1 pound lean ground beef
1 small onion, diced
1 (28 ounce) jar spaghetti sauce
4 ounces sliced pepperoni sausage
2 cups shredded mozzarella cheese

Preheat oven to 350 degrees F (175 degrees C).

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a medium skillet over medium-high heat, cook beef with onion until beef is brown. Drain. Combine beef mixture with spaghetti sauce, pepperoni and cooked pasta and pour into a 9×13 inch baking dish. Top with mozzarella.

Bake in preheated oven for 30 minutes, until cheese is melted and golden.

Cracker Crusted Pork Chops

2 eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 (4 ounce) packets saltine crackers, crushed
3 tablespoons vegetable oil
6 thin cut pork chops

Preheat the oven to 375 degrees F (190 degrees C).

In a shallow bowl or pie plate, whisk eggs with garlic powder and onion powder. Place cracker crumbs on a separate plate. Heat the oil in a large skillet over medium-high heat. Dip pork chops into the egg, then press in the cracker crumbs to coat. Fry in the hot oil for 2 to 3 minutes per side, just until golden brown. Remove to a baking sheet.

Bake for 45 minutes in the preheated oven, turning once. Serve immediately.

CHOCOLATE CHIP COOKIES

1 2/3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup butter, softened
3/4 cup packed brown sugar
1/3 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups milk chocolate chips

Preheat the oven to 375 degrees F (190 degrees C).

Sift together the flour, baking powder, and salt; set aside.

In a medium bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla. Gradually stir in the sifted ingredients, then stir in the chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Chocolate Peanut Butter Bars

1 cup butter or margarine, melted
2 cups graham cracker crumbs
2 cups confectioners’ sugar
1 cup peanut butter
1 1/2 cups semisweet chocolate chips
4 tablespoons peanut butter

In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan.

In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

CHOCOLATE CHOCOLATE CHIP LOAF CAKES

1/2 cup butter or Marg, softened
2/3 cup packed brown sugar
1 cup semisweet chocolate chips, melted
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups applesauce (1 cup sweetened, 1/2 unsweetened)
1/2 cup semisweet chocolate chips

GLAZE/ICING:
1/2 cup semisweet chocolate chips
1 tablespoon butter (no substitutes)
5 teaspoons water
1/2 cup confectioners’ sugar
1/4 teaspoon vanilla extract
Dash salt

Directions

1. In a mixing bowl, cream butter and brown sugar. Add melted chocolate chips, eggs and vanilla; mix well. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with applesauce. Fold in miniature chocolate chips. Divide batter among 2 loaf pans. Bake at 350 degrees F for 30-40 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

2. For glaze, combine chocolate chips, butter and water in a saucepan; cook and stir over low heat until chocolate is melted. Remove from the heat; stir in confectioners’ sugar, vanilla and salt. Drizzle over cooled loaves…or fully cover.
